Cooking up Change at Home: Tropical “C” Burst

Ever wish you could try the winning dishes from Cooking up Change? Well, here’s your chance. Each month, we’ll share a Cooking up Change recipe so you can try the meal at home and taste firsthand how these students are changing the future of school food.

Healthy Schools Campaign’s Cooking up Change contest challenges high school culinary students to create a healthy and delicious school meal that can be served in a school cafeteria. Cooking up Change is not only fun and educational, it also adds student voices to the national conversation about school food. Through Cooking up Change, these young chefs do more than sharpen their culinary skills; they develop leadership, public speaking and team building skills and create relationships and networks that will last a lifetime.

Today, we present the fruit side dish of the menu that won the 2014 Cooking up Change Los Angeles competition: Tropical “C” Burst. The 2016 Cooking up Change Los Angeles contest took place earlier this month, and this year’s chefs came up with fresh, delicious food, too! We can’t wait to see this year’s LA team compete in Washington, D.C.

Tropical “C” Burst (serves six)

INGREDIENTS

  • 1 ½ cups diced apples
    1 ½ cups diced kiwi
    1 ½ cups diced cucumber
    ¾ cup peeled oranges
    ¾ cup canned pineapple
    pinch chili powder
    pinch cayenne pepper
    1 ½ teaspoons lemon juice
    1 ½ teaspoons honey
    6 tablespoons fresh cilantro

PREPARATION

  1. Place all produce in a large bowl.
  2. In a small bowl, whisk together chili powder, cayenne pepper, lemon juice and honey. Add cilantro.
  3. Toss produce together with dressing.
  4. Divide into six servings.
  5. Serve and enjoy!
