Cooking up Change at Home: Vegetarian Taco Burritos

Ever wish you could try the winning dishes from Cooking up Change? Well, here’s your chance. Each month, we’ll share a Cooking up Change recipe so you can try the meal at home and taste firsthand how these students are changing the future of school food.

Healthy Schools Campaign’s Cooking up Change contest challenges high school culinary students to create a healthy and delicious school meal that can be served in a school cafeteria. Cooking up Change is not only fun and educational, but it also adds student voices to the national conversation about school food. Through Cooking up Change, these young chefs do more than sharpen their culinary skills; they develop leadership, public speaking and team building skills and create relationships and networks that will last a lifetime.

Today, we present the main dish of the menu that won the Cooking up Change Phoenix contest and competed in the national finals: Taco Burritos. This is one of the only vegetarian meals to ever win a Cooking up Change competition—that’s no small feat. The team also prepared Sautéed Green Beans and Carrots and Peanut Butter and Banana Cup to round out their delicious menu. Read more about their journey to the Cooking up Change national finals.

Taco Burritos

Serves 4

1 cup chopped Romaine lettuce
1 cup tomato
2 cups refried beans
1 tablespoon plus 1 teaspoon taco seasoning
2 tablespoons plus 2 teaspoons water
4 9-inch whole grain tortillas
8 slices cheddar cheese
¼ cup sour cream

  1. Wash fresh produce. Shred lettuce and thinly slice tomato.
  2. Put refried beans into a small pot over medium heat. Stir in taco seasoning and 2 teaspoons of water. Cover and let warm until mixture is heated through, about 2 minutes.
  3. Lay tortilla out flat. Spread one quarter of the bean mixture across half of the tortilla. Layer one quarter of the cheese, lettuce and tomato on top of the beans. Spread one quarter of the sour cream on the bare half of the tortilla.
  4. Fold the half of the tortilla with the sour cream over the loaded half. Fold in half again so it resembles a triangular shape. Repeat process with the remaining tortillas.
  5. Serve and enjoy!
