Mascarpone & Almond-Stuffed Dates

In the world of simple three-ingredient recipes, this is a great one. It can be used as an appetizer or a simple dessert. It’s classy, easy to make, not full of sugar, and it’s really delicious. I love the mix of flavors and textures — sweet chewy dates, smooth, creamy, mascarpone and crunchy, salty, almonds. Henry loved the dates, enjoys almonds, and as for the mascarpone – he could take it or leave it. So I guess there’s more for me to eat. You can’t win them all.
Mascarpone & Almond-Stuffed Dates
Medjool Dates
Mascarpone Cheese
Chopped Almonds
Optional – zest of lemon or lime
Cut the dates in half and remove the pits. Spoon in a bit of the mascarpone. Place a whole almond in the middle of each. Then you can sprinkle some lemon or lime zest on top for a nice citrus-y finish.
