Orange You Glad You Have This Easy Summer Lunch?

This summer-inspired salad and smoothie combo takes about 20 minutes.

We’re always a bit more rushed in summer than we had hoped. This summer-inspired salad and smoothie combo only takes about 20 minutes; just pop the veggies on the grill and start making the smoothie. Plus the smoothie offers a hidden bonus:  you’ll be amazed at the workout you’ll get from squeezing that citrus!

Orange Banana Summer Smoothie (via FoodNetwork.com)
makes 3 smoothies

You’ll Need:

  • 4 freshly squeezed oranges
  • 1 tablespoon freshly squeezed lime juice
  • 1 cup of strawberries
  • 1 1/2 bananas

How to Make It:

  1. Combine ingredients in a blender
  2. Enjoy!

Grilled Eggplant Salad (via FoodNetwork.com)

You’ll Need:

  • 1 large eggplant, cut into 1-inch chunks
  • 1 red onion, sliced
  • Olive oil
  • 1 avocado, cut into large chunks
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon Mustard
  • 1 tablespoon oregano leaves, chopped
  • Honey
  • Salt and freshly ground black pepper
  • 1 lemon, zested
  • Organic chicken (optional)

How to Make It:

  1. Brush the eggplant and onions with olive oil and place on the grill. Grill until the eggplant is soft and the onion is beginning to char. Once cool, add them to the serving bowl with the avocado.
  2. Whisk together the remaining ingredients for dressing, adding the honey and olive oil last at your own discretion.  
  3. Pour dressing onto salad, mix and add fresh lemon juice.
