Banana bites for back-to-school!

The first day of school is just around the corner, and with school almost back in session, tummies begin to rumble in anticipation for delicious after-school snacks. While healthy snacks like “Ants on a Log” or fruit with yogurt are classic choices, it is fun to occasionally put a creative twist on the usual snack.

This version of a peanut butter-and-banana-sandwich from Fresh Choices by David Joachim and HSC’s own Rochelle Davis is sure to be a hit with the kids after they get home from school. Not only is it a fun spin on the peanut butter sandwich, it is also easy enough to make that the kids can help prepare them too!

Peanut Butter and Banana Spirals (adapted from Fresh Choices)

You’ll Need:

  • 2 bananas, peeled

  • ½ cup creamy peanut butter (you can also use almond or sunflower butter)

  • 1 tbsp orange juice

  • ⅓ cup organic low-fat vanilla yogurt

  • 4 whole wheat tortillas

  • ¼ teaspoon ground cinnamon (optional)

How to Make It:

  1. In a small bowl, stir together peanut butter and yogurt.

  2. In another small bowl, toss bananas with orange juice.

  3. Spread the peanut butter mixture over tortillas, leaving about a ½” border.

  4. Place one banana near the edge of the tortilla and roll it up. Slice into 1/2-inch rounds.

  5. Sprinkle with cinnamon if desired.

  6. Enjoy!
