Recipe Friday: Classic Crunchy Peanut Butter

A great recipe for homemade peanut butter.

(Adapted from Kath Eats Real Food)

The great thing about peanut butter is that it’s delicious on pretty much anything. Sandwiches? Check. Dessert? Check. Yogurt? Check out what these Cooking up Change chefs created a couple of years ago!

Peanut butter is not only a tasty snack — it’s good for you, too, packed with protein, heart-healthy monounsaturated fat, immunity-boosting B6 and more. While you can buy natural peanut butter at the store, we love this homemade version because it’s super simple (four ingredients!), it's sugar- and preservative-free, and it requires almost no time at all. It’s also a fun indoor activity for kids to help with on a cold winter day.

You’ll Need:

  • 4 cups whole dry-roasted unsalted peanuts
  • 1 cup chopped dry-roasted unsalted peanuts
  • 1 tsp vanilla
  • 1 tsp kosher salt

How to make it:

1. Combine whole peanuts, vanilla and salt in a food processor and blend until peanut butter has reached desired consistency. To add some crunch, stir in the chopped peanuts. That’s it!

Thanks, Kath Eats Real Food, for sharing this recipe!
