We love these festive diploma roll-ups for graduation parties. They’re super easy to make, easy to adjust per the tastes of your guests or dietary restrictions, and they’re a fun, creative salute to the graduates in your life. Congratulations to the class of 2013, and best of luck from HSC!
Graduation Day is almost here for many students across the country. And whether your young scholar is graduating from kindergarten, middle school, high school, college or even a postgraduate track, you’ll want to celebrate. Graduation parties are a lot of fun, but when you’ve got quite a few to plan or attend, that means a whole lot of cookies, mortarboard cakes and other unhealthy snacks. It’s okay to treat yourself on occasion, but who says healthy treats can’t also be ideal for celebration?

What You’ll Need:
Flatbread of your choice (we used whole-wheat tortillas, but you could also use corn tortillas, naan, roti or gluten-free flatbread as needed)
Any combination of lean meats, low-fat cheeses or fruits and veggies of your choice:
Some ideas:
Hummus, cucumber and chopped peppers
Light, spreadable cheese (such as Laughing Cow), smoked turkey and shredded carrot
Apples, Gouda cheese cubes and arugula
Tuna salad and sliced tomatoes
Light veggie cream cheese and cucumber
Almond butter with slivered almonds and dried cranberries
Choose fillings in your school’s colors! To use a collegiate example, go with goat cheese and red peppers or sun-dried tomatoes for the red and white of the University of Wisconsin
Carrot (and a vegetable peeler!)
Ribbon in your school’s colors
How to Make It:
If not already rectangular, cut edges of the tortilla/flatbread to form a rectangle.
Layer the fillings of your choice on the flatbread.
Peel the carrot in long strands to form ribbons.
Wrap up the “diploma” and tie a carrot “ribbon” around it – alternately, you could use ribbons in your school’s colors — or both!
