Summer is just around the corner, which means it’s almost time for picnics, barbecues and block parties — and nothing goes better with a warm day than some fresh fruit for a cool, sweet treat.
If you want a little something extra as your fruit dish or are looking for something the kids could easily help prepare, we found this “Fruit Sushi” from SuperHealthyKids to be just the thing. Easy to make, memorable and your party guests of all ages will enjoy the fun presentation.
You’ll Need (per how much you want to make):
Cantaloupe (or the melon of your choice)
Bananas
Cucumbers
Fruit leather (either the sugar-free store-bought kind, or you can make your own!)
Toothpicks
Coconut shavings or sesame seeds
(Optional) Greek yogurt and honey for dipping
How to Make It:
For the banana sushi, simply cut the bananas into chunks, about an inch thick. Wrap the fruit leather around the banana slices. Hold together with a toothpick, if necessary, and sprinkle with a little coconut if desired.
For the salty-sweet cantaloupe sushi, use a vegetable peeler to slice long, thin slices of cucumber. Cut cantaloupe (or your desired melon) into inch-thick slices and wrap the cucumber strips around the melon. You may need to hold it together with a toothpick. Add sesame seeds or coconut shavings if desired.
If you want a sweet, cooling dipping sauce to go with it, mix a little Greek yogurt with honey and serve on the side. Enjoy!
