Cooking up Change observations from eight-year-old Henry Bishop.

Henry Bishop is the eight-year-old son of HSC's VP of Policy Mark Bishop. Along with the hundreds of others in attendance at last Thursday's Cooking up Change event in Chicago, Henry had a wonderful time and thoroughly enjoyed the healthy and delcious food served up by the talented student chefs. Henry had such a wonderful time, in fact, that he wanted to share his thoughts with us for our blog. (Pictured: Jill and Henry Bishop)

Last night I went to Cooking up Change. My dad works for Healthy Schools Campaign, which runs the event. [The Bridgeport Art Center] is a big space with an elevator the size of a room. The students there are in high school and are learning how to cook healthy, affordable and tasty school lunches. I was very excited to try all the food.

Since I love to cook, this was a very fun event for me. Everyone, please know that this food is better than my school food. The food was great. I can’t wait until next year!

Thank you Henry! We couldn't agree more — about how big the elevator was and about the tasty food!
