Watz is looking forward to seeing the work the student chefs have put in. “Cooking up Change highlights a hands-on approach to healthy ingredient preparation; portion control; balance of ingredients, colors and textures; and cost control,” he says. “Students participating in the event will better understand how to creatively use traditional culinary-based techniques to prepare healthy, alternative recipes.”
He also understands the importance of giving students a voice in what’s served at their schools. “It’s important to engage the students and understand what they like and dislike in their school meals,” he says. “Cooking up Change gives us the opportunity to learn from the culinary students what flavors and menu items students are interested in.”
