I beg you, when you carve your pumpkins, don't forget your pumpkin seeds! Not only is pumpkin carving a really fun, creative activity with your kids, it can turn into a culinary activity, too.
Everyone knows that you need to remove your pumpkin seeds when you carve your pumpkin, but in my informal poll of friends, neighbors and family, too many (most in fact) simply throw away the seeds. Little do they realize the deliciousness they are not experiencing.
When you remove the seeds, set them aside and rinse them with water to remove the gunk. Then heat up a pan with a small amount of olive oil, add the seeds, and sprinkle with salt and garlic powder. Keep it over high heat and stir occasionally until the seeds get toasty brown with a few black spots.
